White Bean Chicken Chili (Edit)

Ingredients

  • 2 Tablespoon vegetable oil

  • 1 medium copped white onion

  • 1 chopped green chili

  • 4 cans white great northern beans

  • 2 cartons chicken broth

  • 1 cup water

  • 1 rotisserie chicken

  • 2 tsp salt

  • 2 tsp garlic powder

  • 2 tsp oregano

  • 1 1/2 tsp ground cumin

  • 1 1/2 tsp coriander

  • 1/2 tsp cayenne pepper

Directions

  • Take chicken meat off the bones

  • Sauté onion in oil until brown and then add chilies and seasonings (I use less seasonings so it is not so spicy about 1/2)

  • Stir in remaining ingredients and bring to a boil.

  • Reduce to low heat and simmer covered for 15-20 minutes.
