Components
Garam Masala
Ingredients
5 pounds of chicken legs and/or thighs
1 lemon
1/2 cup full-fat Greek yogurt
3 tablespoons ginger-garlic paste
garam masala
Directions
add chicken to a large bowl
season with salt and garam masala
add ginger-garlic paste
squeeze in the lemon
add yogurt
marinate it in the fridge for up to 24 hours
gril - get grill hot and clean grates
cook on high heat for 5 minutes, flip, lower temp 30-40 more minutes. Done at 170 °F
broil - put a cooling rack onto a sheet pan
get broiler as hot as it goes
cook for until charred (~10 min), flip and cook until charred (~10 min)
If the chicken needs more cooking, turn the broiler off and bake in the middle of the oven on 350 °F
Garam Masala

2 Tbsp cumin
2 Tbsp coriander
2 tsp black cardamom
1 Tbsp black pepper
2 tsp fenugreek or mustard
2 tsp cinnamon
1 Tbsp cayenne pepper
3 Tbsp paprika (1 part smoky)
