Components

  • Garam Masala

Ingredients

  • 5 pounds of chicken legs and/or thighs

  • 1 lemon

  • 1/2 cup full-fat Greek yogurt

  • 3 tablespoons ginger-garlic paste

  • garam masala

Directions

  • add chicken to a large bowl

  • season with salt and garam masala

  • add ginger-garlic paste

  • squeeze in the lemon

  • add yogurt

  • marinate it in the fridge for up to 24 hours

  • gril - get grill hot and clean grates

  • cook on high heat for 5 minutes, flip, lower temp 30-40 more minutes. Done at 170 °F

  • broil - put a cooling rack onto a sheet pan

  • get broiler as hot as it goes

  • cook for until charred (~10 min), flip and cook until charred (~10 min)

  • If the chicken needs more cooking, turn the broiler off and bake in the middle of the oven on 350 °F

Garam Masala

Ingredients

  • 2 Tbsp cumin

  • 2 Tbsp coriander

  • 2 tsp black cardamom

  • 1 Tbsp black pepper

  • 2 tsp fenugreek or mustard

  • 2 tsp cinnamon

  • 1 Tbsp cayenne pepper

  • 3 Tbsp paprika (1 part smoky)
