Ingredients

  • 470 g bread flour

  • 25 g sugar

  • 3 g yeast

  • 285 g warm water

  • 9 g kosher salt

  • 1 Tbsp olive oil

Directions

  • In a mixer, dissolve sugar and yeast in very warm water

  • Add flour and knead until the dough forms a ball

  • Let the dough rest for 15 minutes

  • Add oil and salt and knead until incorporated

  • Place in an oiled container to proof for 2 hours or in the fridge overnight

  • Divide the dough into portions and form into taught balls on a baking sheet

  • Cover with a damp towel and let rise for 30 min to 2 hours

  • Bake in oven at highest temperature
