Creamy Chive Salmon (Edit)
Great with roasted vegetables

Ingredients
1 lb salmon
1.5 tsp fresh chives
1 tbsp vegetable stock concentrate
2 tsp dijon mustard
4 tbsp sour cream
1 tbsp butter
1 lemon
Directions
Pat salmon dry and season with salt and pepper
Head one tablespoon of olive oil and one tablespoon of butter in pan
Cook salmon skin side down until skin is crisp, 5-7 minutes
Flip and cook until fish is cooked all the way through, 1-2 minutes
Set aside and wipe out pan
In the same pan, add stock concentrate, dijon mustard, half lemon juice, 1/4 cup of water, simmer until thickened, 2-3 minutes
Turn off heat and stir in sour cream, half the chives, and 1 tbsp of butter
Season with salt and pepper to taste
Drizzle salmon with sauce and chives
