Creamy Chive Salmon (Edit)

Great with roasted vegetables

Ingredients

  • 1 lb salmon

  • 1.5 tsp fresh chives

  • 1 tbsp vegetable stock concentrate

  • 2 tsp dijon mustard

  • 4 tbsp sour cream

  • 1 tbsp butter

  • 1 lemon

Directions

  • Pat salmon dry and season with salt and pepper

  • Head one tablespoon of olive oil and one tablespoon of butter in pan

  • Cook salmon skin side down until skin is crisp, 5-7 minutes

  • Flip and cook until fish is cooked all the way through, 1-2 minutes

  • Set aside and wipe out pan

  • In the same pan, add stock concentrate, dijon mustard, half lemon juice, 1/4 cup of water, simmer until thickened, 2-3 minutes

  • Turn off heat and stir in sour cream, half the chives, and 1 tbsp of butter

  • Season with salt and pepper to taste

  • Drizzle salmon with sauce and chives
