Ingredients
1/2 cup panko bread crumbs
1 tsp chili powder
1 chicken breast
2 tbsp sour cream
1/4 cup monterey jack cheese
1 tbsp southwest spice
Directions
Preheat oven to 425°F
In a small bowl, combine panko, monterey jack, a drizzle of olive oil, 1/2 tsp of chili powder, 1 tsp of southwest spice, salt and pepper
Butterfly chicken breast and pat dry
Season both sides with salt and pepper
Set chicken on baking sheet covered in foil
Brush top of chicken with sour cream
Coat with pank mixture, pushing firmly to adhere.
Drizzle chicken with olive oil
Bake until chicken is browned and cooked through, 15-18 minutes
